I've seen that tutorial before. Initially I tried this technique but got frustrated with the lack of control I had with the thin side (hard to smooth and change the shape). Instead now I usually make a solid shape and create hollows in it using sculpting tools. I think the best results might be achieved by making a rough shape, letting it cure, and then sculpting the details and final shape over the cured hat "armature".
